
Yeast makes me so nervous and yet no matter how hard I have tried - and I HAVE tried - I have not messed up Smitten Kitchen’s cast iron pizza. It is so good that I genuinely prefer to my local takeout spot.
Even I, I who would mostly rather eat Cheerios than voluntarily dirty a pan in service of feeding my family, can make this and on a weeknight, no less. You can use the wrong yeast, you can significantly short shrift the rise time, you can add whatever weird vegetables to the sauce will make you feel like you are providing nutrients to your small children and still - delicious. Make this at least once a week. Serve with bag salad and that’s real living baby.
